Coconut Almond Energy Bites


  • 2/3 cup sliced almonds
  • Pinch of salt
  • 2/3rd cup shredded coconut (unsweetened)
  • 1 tablespoon chia seeds
  • 2 tablespoons ground flax seeds
  • 1 Shine Organics Calm pouch
  • 1.5 tablespoons honey
  • ½ cup chocolate almond butter (or any nut butter)
  • Additional shredded coconut and sliced almonds (for coating energy bites)

Slightly crush almonds and add to medium. Stir in salt, chia seeds, ground flax seeds and shredded coconut and mix. Stir in the honey, contents of the Shine Organics Calm pouch, and the Chocolate Almond Butter. Mix.

Scoop 1 heaping tablespoon of the mixture, roll into a ball and place on the parchment paper. Continue until you make 12 energy balls. Mix additional shredded coconut and sliced almonds (slightly crushed) in a medium bowl. Roll each energy ball in the coconut almond mix. Store in an airtight container in the refrigerator for up to 5 days.
